Eggs With Oakes Episode 4 Eggs Benedict
Eggs Benedict with Fire 550
4 slices canadian bacon
2 english muffins split & toasted
4 eggs poached
1 tablespoon vinegar for poaching
optional garnish - dill or parsley
3 egg yolks
1 ½ tablespoons cold water
⅓ cup clarified butter, warm
pinch salt, ground paprika, chopped parsley
Hollandaise sauce - in a stainless bowl on top of a double boiler, vigorously and continuously whisk together eggs yolks, cold water, and lemon juice until it has doubled in thickness and volume. Slowly drizzle in the warm clarified butter and salt. Remove from head and salt and pepper to taste.
Poached eggs - fill a pan with 1 ½ inch deep of water, add salt and vinegar. Bring water to a boil over medium heat then reduce to a simmer. Slowly slide in cracked eggs into water. Cook for 2-3 minutes until yolks are semi soft. With a spoon remove eggs
Brown canadian bacon in a skillet over medium heat for 4-5 minutes
Place toasted english muffin halves on the plate. Place 2 slices of bacon on top of each half.
Top with each side with a poached egg and drizzle with the warm hollandaise sauce.
Garnish with salt, paprika and chopped parsley
