Eggs With Oakes Episode 3 Denver Omelet
1 tablespoon olive or canola oil
¼ cup onion finely chopped
¼ cup red pepper finely diced
¼ cup green pepper finely diced
½ cup lean ham chopped
3 fresh eggs
½ cup shredded cheddar
salt and pepper to taste
Heat olive oil in a skillet over medium. Add onions for 2-3 minutes. Add in peppers for 1-2 minutes. The onions should become translucent and the veggies will start browning on the edges. Add in the ham and cook for 1-2 minutes.
Whisk eggs together
Pour the egg mixture into the skillet with all of the vegetables.
Cook both sides of the eggs about 1-2 minutes each side.
Sprinkle the cheese onto half of the omlet then flip the half on top of the other to sandwich the cheese between the two sides.
Remove the skillet from the heat when the eggs still look wet but not runny.
Top with your favorite Million Dollar Highway Saloon hot sauce and ENJOY!
