Eggs With Oakes Episode 2 Steak & Eggs

Steak and Eggs with Dat Devil Dressin

Ingredients
1lb skirt steak
Kosher salt and freshly ground black pepper
Small bunch of parsley
1 garlic clove
Zest of 1 lemon
½ cup extra virgin olive oil
4 large eggs
Directions
Cut steak into 5” long pieces. Salt and pepper both sides generously. Sit at room temperature for 1 hour.
Finely grate garlic clove and lemon zest into a bowl. Add in juice from ½ a lemon and the olive oil. Set aside marinade.
Heat grill. Rub a thin layer of the marinade on the steak.
When the grill is hot use tongs to gently lay the steak on the grill. Cook for 2-3 minutes until a golden brown crust appears. Flip and repeat on the other side.
Remove steak onto a cutting board and let is rest for 10 minutes
While the steak is resting, pour oil into the skillet to just cover the bottom of the pan and lower the heat down to medium. Immediately crack the 4 eggs in the pan.
Cook eggs until edges are crispy, whites are set and yolks are still runny, about 4-6 minutes.
While the eggs are cooking cut your steak into slices at a slant. Transfer to a plate and once the eggs are cooked place them on top of the steak.
Chop fresh parsley to garnish.
